Mini ‘Popsicle’ Cupcakes

These cute, little mini popsicle cupcakes were a perfectly sweet answer for my youngest’s first solo decorating project. They were also quite the hit for her class treats!

Mini popsicle cupcakes are cute, but simple enough for kids to do themselves. The candy topping is a big hit as well. Because well more sugar on sugar, with sprinkles seems to go over quite well with the younger crowd.

Instructions

Bake up a batch of mini cupcakes. We used a doctored funfetti cake mix as the base for ours.

While the cupcakes cool, mix up some butter cream (recipe to follow).

Pipe or spread frosting on top of cooled cupcakes.

Sprinkle with colourful non-perils.

Top with two Mike and Ike Candies to look like popsicles.

Use longer chocolate sprinkles as the popsicle sticks, below candies on the cupcakes.

Repeat until all cupcakes are topped.

Serve. Or store covered at room temperature for up to 2 days.

Easy ‘Butter Cream’ Frosting

1 Cup Butter (or vegetable shortening…or a mix of the two)
4-6 Cups Powdered Sugar
1 teaspoon Vanilla
Pinch of Salt
1-4 Tablespoons of Milk (or water…or even cream)

Cream butter in the stand mixer and add powdered sugar a cup at a time, until very thick and lump free.
Then mix in a pinch of salt and the vanilla.
Additionally add one tablespoon of liquid (milk, water or cream) at a time until desired constancy.
Lastly whip on medium/high speed for an additional minute.
