Spinach Rice

This is an easy Italian rice with spinach and parmesan, that is similar to risotto.

Ingredients

  • 3 1/2 Cups of Chicken Stock or vegetable stock
  • 1 1/2 Cups Uncooked Long Grain White Jasmin Rice
  • 2 Teaspoons Dried Italian Seasoning
  • 2 Cups Spinach - stems removed washed (you can use baby spinach or roughly chopped or tear spinach leaves if large)
  • I Cup Grated Fresh Parmesan

Instructions

  1. Bring stock and Italian seasoning to a boil in large sauce pan, over high heat.
  2. Add the rice. Stir.
  3. Add the spinach on top of the rice and stock. Do not stir.

  4. Reduce heat to low and cover with lid.
  5. Cook for 20 minutes.
  6. Turn off heat, but leave covered on element for 5 minutes.
  7. Remove lid and add grated parmesan to the pot and stir everything together.
  8. Allow to rest an additional 1-2 minutes before serving.
