Spinach Rice

Spinach rice is an easy Italian style rice, that is remarkably similar to risotto, but full of spinach and a breeze to make.

My kids LOVE this rice. It elevated even my picky eater’s ranking of spinach to one of her top 3 veggies! I would like to attribute that to my wonderful parenting/convincing skills, but really I am fairly certain it is the cheese (is it not always the cheese?!) that makes this dish.

This recipe basically only takes two more steps than making regular rice. It is a great side for weeknight dinners and company alike.

I am generous with the spinach and don’t always measure it exactly, but usually just fill the remaining room left in the pot with spinach.

Life is just better with cheesy spinach rice!

Ingredients

3 1/2 Cups of Chicken Stock (or vegetable stock)
1 1/2 Cups Uncooked Long Grain White Jasmin Rice
2 Teaspoons Italian Seasoning
2 Cups Spinach – stems removed, washed (you can use baby spinach or roughly chopped or tear spinach leaves if large)
I Cup Grated Fresh Parmesan

Directions

Bring stock and Italian seasoning to a boil in large sauce pan, over high heat.
Add the rice. Stir.
Add the spinach on top of the rice and stock. Do not stir.
Reduce heat to low and cover with lid.
Cook for 20 minutes.
Turn off heat, but leave covered on element for 5 minutes.
Remove lid and add grated parmesan to the pot and stir everything together.
Allow to rest an additional 1-2 minutes before serving.
